Stuffed Sweet Potato Recipe
Sweet Potatoes:
Pre-heat oven 425º
Wash ‘em clean
Poke holes
Wrap in foil
Bake until tender, 45 to 50 minutes
Black-eyed beans: stove top
Place in a pot and cover with plenty of water (one-part beans to four-parts water). Bring to a boil, then reduce the heat and simmer, covered, 45 minutes or until beans are tender.
Note: it’s not essential to soak your black eye beans
Toppings: stove top for 90-120 seconds
Sliced cherry tomatoes
Chopped green onion
Corn cut off the cob
Combine and ENJOY!
